Do not use the canned or pre cooked chickpeas.  The chickpeas will double in size as they soak. Now strain and remove the water completely.  You can either use a food processor or normal mixer grinder. If using a normal mixer grinder then you will probably have to do the following steps in batches & later mix all together.  Add chickpeas, cilantro, coriander, chopped onion, crushed black pepper, garlic, green chilli, coriander powder, cumin powder, salt, lime juice in a food processor and pulse little bit at a time until all is well combined. Use a spatula to remove the mixture from the sides at regular intervals. The end result should be light coarsely ground falafel mixture. Transfer the falafel mixture to a bowl, cover and refrigerate for at least 1 hour. The chilled mixture will hold together better, making it easier to make the falafel. Now uncover the mixture and add in all purpose flour, baking soda & red chilli powder. Red chilli powder is optional.  Mix all together well.  Then scoop a golf ball size of the falafel mixture and form into falafel balls. I have used the small sized ice cream scooper to have a uniformity in the falafel balls.  Prepare a batch of falafel balls and keep them ready for deep frying.  Heat the oil on medium high flame. The oil should be hot but not very hot or else the falafel might fall apart when released in oil.  Carefully drop the falafel balls in the oil and fry them until they turn medium brown on the outside. Approximately 3 to 4 mins.  In the meantime we can get all the ingredients ready for the sandwich.   Assembling Warm the pita bread in the microwave for 10 secs.  Open the pita bread / pita pockets. Apply tahini sauce in the pocket all over.  Stuff some greens of your choice. I have used ice lettuce in the video.  Now spread the hummus in the pocket. Be generous while spreading the hummus.  Crush 2 to 3 falafels & stuff.  Add in some sliced tomatoes & cucumbers.  Drizzle hot sauce. Stuff 2 more crushed or as it is falafels & top it off with more hummus.  Drizzle some more hot sauce.  Enjoy your falafel sandwich. Burp ! For the Hummus & Tahini Sauce recipe please refer : https://youtu.be/2pjQtYlixQg TIPS Do not use canned chickpeas.  If using a normal mixer grinder, prepare the mixture in batches & mix all together well.  When frying the falafel balls, we want them to be medium brown from outside at the same time they should be well cooked from the inside. Be sure to test your first batch or just fry a couple of balls first to adjust the frying time & the flame.   For Tahini sauce and Hummus sauce please refer to recipe https://youtu.be/2pjQtYlixQg Please don’t forget to leave us a comment below when you try out our recipes.
